Winemaking: The vines are planted 500 meters above sea level on a Guyot system. After harvest in late October, the grapes are left to dry in the ventilated indoors for 4 months following a traditional local method. The grapes are then pressed and fermented in stainless steel and aged for 1 year in barriques.
